Air Fryer Buffalo Chicken Quesadillas are crispy, spicy, and cheesy tortillas filled with shredded chicken, buffalo sauce, ranch dressing, and a mix of cheddar and blue cheese. They’re quick to make and perfect for dinners, parties, or meal prep.

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo wing sauce
  • 3 tablespoons ranch dressing
  • 8 6″ flour tortillas
  • 2 cups cheddar cheese, shredded
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons cilantro, chopped (optional)
  • Extra ranch for dipping

Instructions

  1. In a large bowl, combine shredded chicken, buffalo wing sauce, and ranch dressing. Mix until fully combined.
  2. Lay out the flour tortillas. Spoon 1/4 cup of the chicken mixture onto half of each tortilla.
  3. Sprinkle with 1/4 cup shredded cheddar cheese and 1 tablespoon blue cheese crumbles.
  4. Fold the tortillas into half-moons and gently press down.
  5. Preheat the air fryer to 350°F.
  6. Place quesadillas in the air fryer basket in a single layer. Cook for 4 minutes.
  7. Flip and cook for an additional 4 minutes, or until golden and crispy.
  8. Remove, cut into wedges, garnish with cilantro if desired, and serve with ranch.

Notes

  • Use rotisserie chicken for convenience.
  • Swap blue cheese for feta or skip if preferred.
  • Add vegetables like onions, peppers, or spinach for variation.
  • To make kid-friendly, reduce or skip the buffalo sauce.
  • Lightly oil tortillas before air frying for extra crispness.
