  • 2 cups cucumber, grated and well-drained
  • 1 1/2 cups full-fat Greek yogurt
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the cucumbers thoroughly. Peel and remove seeds if using regular cucumbers.
  2. Grate the cucumber and squeeze out excess liquid using a towel.
  3. In a bowl, combine Greek yogurt, garlic, lemon juice, olive oil, salt, and black pepper.
  4. Stir until smooth and creamy.
  5. Add chopped dill and mix gently.
  6. Fold the drained cucumber into the yogurt mixture.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Stir gently and adjust seasoning if needed before serving.

Notes

  • Draining the cucumber well prevents a watery salad.
  • Full-fat Greek yogurt gives the best texture.
