These Toffee Peanut Clusters are a quick, no-bake candy made with just three ingredients: chocolate, roasted peanuts, and toffee bits. Perfect for holidays, gifting, or last-minute sweet cravings, they offer a delicious sweet-and-salty combo in every bite.

Ingredients

Scale
  • 12 ounces semi-sweet or bittersweet chocolate (chips or chopped bars)
  • 1 1/2 cups dry roasted salted peanuts
  • 1/2 cup toffee bits (e.g., Heath Bits O’ Brickle)
  • Flaky sea salt (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a microwave-safe bowl or double boiler, melt the chocolate until smooth, stirring frequently.
  3. Fold in the roasted peanuts and toffee bits until evenly coated.
  4. Using a cookie scoop or spoon, drop clusters onto the prepared baking sheet.
  5. Sprinkle with flaky sea salt, if using.
  6. Refrigerate the clusters for at least 30 minutes or until set.
  7. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.

Notes

  • Use parchment or silicone mats to prevent sticking.
  • Microwave chocolate in 30-second bursts to avoid burning.
  • Customize with add-ins like pretzels, marshmallows, or dried fruit.
  • Use quality chocolate for best results (e.g., Ghirardelli).
  • Great for gifting in mini cupcake liners or decorative tins.
