A hearty and easy-to-make Tater Tot Breakfast Casserole packed with savory sausage, eggs, melted cheese, and crispy tater tots—perfect for brunch, holidays, or make-ahead meal prep.

  • 32 oz bag tater tots, cooked
  • 1 pound ground sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 large eggs
  • 1 cup sour cream
  • 2 cups Colby Jack cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the tater tots according to the package instructions (or air fry for extra crispiness). Set aside.
  3. In a skillet over medium heat, cook the ground sausage until browned and cooked through. Drain excess fat.
  4. Add diced bell peppers to the skillet and cook for 2–3 minutes until softened. Remove from heat.
  5. In a large bowl, whisk together eggs, sour cream, and shredded Colby Jack cheese until well combined. Season with salt and pepper.
  6. Add the cooked sausage, bell peppers, and tater tots to the egg mixture. Stir gently to combine.
  7. Transfer the mixture into a greased 8×8-inch baking dish.
  8. Bake for 35–40 minutes, or until the top is golden and the casserole is set in the center.
  9. Let rest for 5–10 minutes before slicing and serving. Enjoy!
