Ingredients

Scale
  • ½ pound boneless skinless chicken breasts, cubed
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ½ teaspoon brown sugar
  • Black pepper to taste
  • 1 red bell pepper, diced
  • 8 ounces canned pineapple chunks with juice
  • Sliced scallions for garnish (optional)
  • Rice for serving (optional)

Instructions

  1. In a crockpot, combine soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper. Stir until well mixed.
  2. Add cubed chicken, diced red bell pepper, and canned pineapple chunks with juice.
  3. Stir gently to ensure all ingredients are evenly coated.
  4. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
  5. About 30 minutes before serving, taste the sauce and adjust seasoning if needed.
  6. Optional: Add a cornstarch slurry to thicken the sauce.
  7. Garnish with sliced scallions and serve over rice or preferred sides.

Notes

  • Use pineapple juice to enhance flavor and keep the chicken moist.
  • Avoid lifting the lid while cooking to maintain heat and ensure even cooking.
  • For spicier flavor, add red pepper flakes or jalapeños.
  • Thicken the sauce with cornstarch slurry if desired.
  • Can be served with rice, quinoa, or in wraps.
