Sushi Cucumber Salad is a light and refreshing sushi-inspired salad made with crisp cucumbers tossed in a tangy rice vinegar dressing with subtle sweetness and sesame flavor. It delivers classic sushi taste in a quick and easy salad form.

  • 4 Persian or mini cucumbers, thinly sliced
  • 1 teaspoon salt (for salting cucumbers)
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Wash the cucumbers thoroughly and slice them thinly into rounds or half-moons.
  2. Place the cucumbers in a bowl, sprinkle with salt, and toss gently.
  3. Let the cucumbers sit for 10 minutes to release excess moisture.
  4. Gently pat or squeeze the cucumbers dry and transfer to a clean bowl.
  5. In a small bowl, whisk together rice vinegar, sugar, salt, and sesame oil until dissolved.
  6. Pour the dressing over the cucumbers and toss gently to coat.
  7. Sprinkle with toasted sesame seeds and green onions if using.
  8. Chill for 10–15 minutes before serving for best flavor.
