Sticky Pineapple Chicken is a quick and flavorful dinner made with juicy chicken, sweet chili sauce, pineapple juice, and soy sauce. This tropical, sweet-and-savory dish is ready in under 30 minutes and perfect for busy weeknights.

  • 1 1/2 lbs. Chicken Breast, cut into bite-size pieces
  • 1/2 to 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Pineapple Juice
  • 1/4 cup Soy Sauce
  • 1/3 cup Brown Sugar
  • 1/4 cup Sweet Chili Sauce
  • 1 teaspoon Fresh Ginger (or 1/4 teaspoon Dried Ginger)
  • 1 1/2 teaspoon Cornstarch
  • 1 1/2 cups Fresh Pineapple, sliced
  • Optional: Fresh Cilantro, Almonds, Cashews

Instructions

  1. Cut chicken into bite-size pieces and pat dry. Season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken for 6–8 minutes until golden and fully cooked.
  3. In a separate saucepan, combine pineapple juice, soy sauce, brown sugar, sweet chili sauce, cornstarch, and ginger. Simmer for 5 minutes until thickened.
  4. Pour sauce over cooked chicken and stir to coat evenly.
  5. Fold in fresh pineapple slices and cook for another 1–2 minutes.
  6. Garnish with fresh cilantro and optional nuts before serving.

Notes

  • Use tamari for a gluten-free option.
  • Fresh pineapple gives the best flavor and texture.
  • Add more cornstarch slurry if sauce is too thin.
  • Reheat in a skillet with a splash of water to maintain glaze.
  • Serve with coconut rice, lettuce cups, or tortillas.
