Soft and sweet Linzer cookies are buttery almond sandwich cookies filled with jam and dusted with powdered sugar. This traditional Austrian-inspired recipe yields tender, melt-in-your-mouth cookies perfect for holidays or any special occasion.

  • 1 cup (2 sticks) unsalted butter, softened
  • 2/3 cup powdered sugar (plus extra for dusting)
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam (or jam of choice)
  • Optional: 1 teaspoon lemon zest or 1/2 teaspoon ground cinnamon

Instructions

  1. Cream the butter and powdered sugar together until light and fluffy.
  2. Add egg yolks and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together all-purpose flour, almond flour, and salt.
  4. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
  5. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the chilled dough to about 1/4 inch thick. Cut out cookies using a round cutter; cut smaller shapes into half for the tops.
  8. Place cookies on baking sheets and bake for 8–10 minutes or until edges are just lightly golden.
  9. Cool completely on wire racks.
  10. Spread jam on the bottom cookies and gently press a top cookie with a cutout over it to sandwich.
  11. Dust with powdered sugar before serving.

Notes

  • Chill the dough for at least an hour to maintain cookie shape.
  • Use thick jam to prevent soggy cookies.
  • Store cookies in an airtight container for up to 4 days.
  • Freeze unfilled cookies for longer storage; fill before serving.
  • For a gluten-free version, replace all-purpose flour with gluten-free flour blend.
