Slow Cooker Street Corn Chicken is a creamy crockpot dinner made with tender chicken, sweet corn, and a rich street-corn inspired sauce. It is easy, comforting, and perfect for family meals.

  • 2 pounds boneless skinless chicken breasts
  • 2 cups sweet corn kernels
  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add corn kernels over the chicken.
  3. Sprinkle garlic and chili powder on top.
  4. Add cream cheese and sour cream.
  5. Cook on low for 5–6 hours or high for 3–4 hours.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the crockpot and stir well.
  8. Add lime juice and mix.
  9. Garnish with cilantro and serve warm.

Notes

  • Chicken thighs can be used instead of chicken breasts.
  • Add shredded cheese for extra richness.
