These Slow Cooker Cheesy Potatoes are a creamy, comforting, and easy-to-make side dish perfect for family dinners, holidays, or potlucks. Made with frozen diced potatoes, cheddar cheese, sour cream, and cream of chicken soup, this dump-and-go crockpot recipe delivers delicious results every time.

  • 1 (32 oz) bag frozen diced potatoes
  • 1 medium onion, diced
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 tbsp butter, melted
  • 2 1/2 cups shredded cheddar cheese (divided)

Instructions

  1. Spray the inside of your slow cooker with nonstick spray.
  2. In a large bowl, mix together the potatoes, diced onion, sour cream, cream of chicken soup, melted butter, garlic powder, onion powder, salt, pepper, and 1½ cups of shredded cheese.
  3. Transfer the mixture to the slow cooker and spread evenly.
  4. Cover and cook on low for 4 hours.
  5. Uncover, sprinkle the remaining 1 cup of shredded cheese on top, and cover again for 15 minutes or until cheese is fully melted.
  6. Serve warm, garnished with optional toppings like green onions or bacon bits.
