Slow Cooker Beef Tips is a comforting, easy-to-make recipe featuring tender chunks of beef simmered in a rich, savory gravy. Perfect for weeknights or family dinners, this dish is hearty, flavorful, and practically cooks itself in the slow cooker.

  • 2 lbs beef tips (sirloin tips or stew meat, cubed)
  • 2 tbsp olive oil
  • 2 cups low-sodium beef broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch (for thickening)
  • Salt and pepper, to taste
  • Optional: 1 cup mushrooms, 1/2 cup red wine, 1 tbsp butter, fresh thyme or rosemary

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add beef tips in batches and sear until browned on all sides.
  2. Transfer browned beef to a slow cooker. Add onions, garlic, beef broth, Worcestershire sauce, and soy sauce. Stir to combine.
  3. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until the beef is tender.
  4. Thirty minutes before serving, mix cornstarch with 1/4 cup of cold water. Stir the slurry into the slow cooker to thicken the gravy.
  5. Uncover and cook for another 20–30 minutes, allowing the sauce to thicken.
  6. Stir in butter or herbs before serving for added richness.
  7. Serve hot over mashed potatoes, rice, or noodles.
