Seafoam Salad is a nostalgic lime-flavored dessert made with whipped topping, crushed pineapple, fruity marshmallows, and shredded coconut. This no-bake vintage fluff salad is perfect for holidays, potlucks, and summer gatherings.

  • 3 ounce box lime Jell-O (do not prepare, use powder only)
  • 16 ounces Cool Whip or similar whipped topping
  • 20 ounce can crushed pineapple (undrained)
  • 2 cups fruity mini marshmallows
  • 1 cup sour cream
  • 1 cup sweetened shredded coconut

Instructions

  1. In a large bowl, combine the lime Jell-O powder with the whipped topping. Stir until no white streaks remain.
  2. Add crushed pineapple (with juice), fruity marshmallows, sour cream, and shredded coconut.
  3. Mix gently until all ingredients are fully combined.
  4. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to let the flavors meld and the salad firm up.
  5. Before serving, optionally garnish with additional whipped cream, marshmallows, fresh lime slices, or a cherry.

Notes

  • Do not freeze; texture will break down.
  • Use cottage cheese instead of sour cream for a savory variation.
  • Fresh whipped cream can replace Cool Whip but won’t hold up as long.
  • Add chopped pecans or pistachios for a crunchy twist.
  • To intensify lime flavor, drain pineapple and add 2 tbsp lime juice.
