This Sausage Green Bean Potato Casserole is an easy, hearty one-pan meal featuring smoky sausage, tender potatoes, and crisp green beans, seasoned with bold Creole spices—perfect for busy weeknights or comforting family dinners.

  • 3 tablespoons vegetable oil, divided
  • 14 ounces Polska Kielbasa, sliced
  • 1 1/2 pounds petite gold potatoes, halved
  • 1 pound fresh green beans, trimmed and cut in half
  • 1/2 cup yellow onion, sliced
  • 4 cloves garlic, sliced
  • 1 teaspoon Creole seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (204°C). Spray a 9×13-inch baking dish with nonstick spray.
  2. Heat 1 tablespoon of oil in a skillet over medium heat. Add sausage slices and brown both sides. Remove from heat.
  3. In a large mixing bowl, toss potatoes, green beans, onion, and garlic with the remaining 2 tablespoons of oil.
  4. In a small bowl, combine Creole seasoning, garlic powder, onion powder, black pepper, and salt.
  5. Gradually sprinkle the spice mix over the vegetables, tossing between additions to evenly coat.
  6. Combine the seasoned vegetables and browned sausage in the baking dish.
  7. Cover with foil and bake for 40 minutes or until potatoes are tender when pierced with a fork.
  8. Uncover for the last 5–10 minutes if desired for a crisper top.
