Ingredients

Scale
  • 1/2 cup milk
  • 1/2 cup bread crumbs (panko or plain)
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter (divided)
  • 1 medium onion, peeled, halved, and thinly sliced
  • 1 pound white button mushrooms, sliced
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme (plus more for garnish)
  • 1 3/4 cups beef broth
  • 1/4 cup red wine

Instructions

  1. In a large bowl, whisk together milk and bread crumbs. Add ground beef, salt, and pepper. Mix gently until combined.
  2. Shape the mixture into four 1/2-inch thick oval patties using damp hands. Chill for at least 30 minutes or up to 4 hours.
  3. In a large skillet over medium-high heat, melt 1 tablespoon butter. Brown patties for 5 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add remaining 3 tablespoons butter and onions. Cook for 5 minutes until softened.
  5. Add mushrooms, thyme, and 1/2 teaspoon salt. Cook 5–7 minutes until liquid evaporates.
  6. Stir in tomato paste and flour. Cook for 2 minutes until browned.
  7. Gradually add beef broth and red wine, stirring to combine. Bring to a simmer.
  8. Return patties to the skillet, spoon gravy over them, cover, and simmer on medium-low for 12–15 minutes until fully cooked.
  9. Adjust seasoning if needed and garnish with fresh thyme.

Notes

  • Chilling patties helps them hold their shape during cooking.
  • You can substitute red wine with additional beef broth or Worcestershire sauce.
  • Use 93% lean ground turkey for a lighter option.
  • Store leftovers in the fridge for up to 4 days or freeze uncooked patties for up to 2 months.
  • For a gluten-free version, use gluten-free breadcrumbs and flour alternatives.
