Rotel Ranch Dip is a creamy, zesty, no-cook party dip made with ranch seasoning, Rotel tomatoes, corn, and cheddar cheese. It’s perfect for gatherings, potlucks, or summer outings and has gone viral as ‘boat dip’ on TikTok.

Ingredients

  • 8 oz cream cheese, softened
  • 16 oz sour cream
  • 1 oz packet ranch seasoning mix
  • 15 oz can fire-roasted corn, drained
  • 10 oz can Rotel (diced tomatoes with green chiles), drained
  • 4 oz can diced green chiles, drained
  • 8 oz shredded cheddar cheese

Instructions

  1. Allow cream cheese to soften at room temperature or microwave for 10 seconds until soft.
  2. In a large mixing bowl, whip cream cheese with a hand mixer or whisk until smooth.
  3. Add sour cream, ranch seasoning, corn, Rotel, green chiles, and shredded cheese to the bowl.
  4. Mix all ingredients thoroughly until well combined.
  5. Cover tightly and refrigerate for at least 2–3 hours before serving.
  6. Serve chilled with chips, crackers, or fresh-cut veggies.

Notes

  • For extra heat, use spicy Rotel or add diced jalapeños.
  • Make it protein-packed by stirring in cooked sausage, shredded chicken, or black beans.
  • Swap sour cream for Greek yogurt for a lighter version.
  • Use a Mexican cheese blend instead of cheddar for added flavor.
  • Best when made ahead and chilled overnight.
