Reuben Sandwich is a classic deli-style grilled sandwich made with corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing layered on rye bread and cooked until golden and melty.

  • 8 slices rye bread
  • 12 oz corned beef, thinly sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, well drained
  • 1/2 cup Thousand Island dressing
  • 4 tbsp butter, softened

Instructions

  1. Butter one side of each slice of rye bread.
  2. Place four slices of bread butter-side down on a clean surface.
  3. Layer Swiss cheese, corned beef, sauerkraut, and Thousand Island dressing evenly on each slice.
  4. Add another slice of Swiss cheese on top and cover with remaining bread, butter-side up.
  5. Heat a skillet or griddle over medium heat.
  6. Grill sandwiches until the bread is golden and crispy, about 3–4 minutes per side.
  7. Flip carefully and cook until the cheese is fully melted and the sandwich is heated through.
  8. Remove from heat, slice if desired, and serve hot.

Notes

  • Drain sauerkraut thoroughly to prevent soggy sandwiches.
  • Cook over medium heat so the bread doesn’t burn before the cheese melts.
  • Pastrami can be substituted for corned beef if preferred.
  • Serve immediately for best texture and flavor.
