Red Velvet Cheesecake Bites are easy, no-bake treats combining creamy cheesecake filling with red velvet cake crumbs. Perfect for holidays, parties, or anytime indulgence.

  • 1 box red velvet cake mix
  • Ingredients as listed on cake mix packaging (typically eggs, oil, and milk or water)
  • 8 oz cream cheese (full fat, softened)
  • 4 tbsp butter (softened)
  • 1 cup powdered sugar (adjust to taste)
  • 1/2 cup crushed graham crackers
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F. Prepare and bake the red velvet cake according to the box instructions. Let it cool completely.
  2. Once cooled, crumble the cake into fine crumbs. If the cake is too moist, dry the chunks in the oven for 5–6 minutes.
  3. In a large bowl, beat cream cheese, butter, and powdered sugar until fluffy and smooth.
  4. Stir in crushed graham crackers and vanilla extract. Mix until combined and scoopable.
  5. Use a small scoop to form balls from the cheesecake mixture and roll between hands to shape. Place on parchment-lined tray and refrigerate for 1 hour.
  6. After chilling, roll each cheesecake ball in red velvet cake crumbs until fully coated.
  7. Refrigerate until ready to serve. Optional: drizzle with melted chocolate before serving.
