  • 1 1/2 pounds boneless skinless chicken breast or thighs, diced
  • 2 cups pineapple chunks (fresh or canned in juice)
  • 1 cup pineapple juice
  • 1 1/2 cups long-grain white rice
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 3 tablespoons low-sodium soy sauce
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth (for cooking rice if not pre-cooked)

Instructions

  1. Cook rice according to package instructions using water or chicken broth. Fluff and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced chicken in a single layer and cook for 6 to 8 minutes until browned and fully cooked. Remove and set aside.
  4. In the same skillet, add chopped onion and cook for 2 to 3 minutes until softened.
  5. Add garlic and diced bell peppers. Cook for another 2 minutes until fragrant.
  6. Pour in pineapple juice and soy sauce. Stir in ground ginger and black pepper. Bring to a gentle simmer.
  7. Return chicken to the skillet and add pineapple chunks.
  8. Stir in cooked rice and mix until evenly coated with sauce.
  9. Cook for 3 to 5 minutes until heated through and flavors are combined.
  10. Serve warm and garnish with chopped green onions or sesame seeds if desired.
