Ingredients

Scale
  • 1 pound thinly sliced sirloin or ribeye steak
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup sliced mushrooms (optional)
  • 4 slices provolone or mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter for grilling

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced onions and bell peppers and cook for 3–4 minutes until softened.
  3. Add mushrooms if using and cook another 2 minutes.
  4. Remove vegetables from the skillet and set aside.
  5. Add the sliced steak to the skillet, season with salt and pepper, and cook for 3–5 minutes until browned.
  6. Return the vegetables to the skillet and mix with the steak.
  7. Place a tortilla on a flat surface and add a portion of the steak mixture to the center.
  8. Top with a slice of cheese.
  9. Fold the sides of the tortilla inward and roll tightly into a wrap.
  10. Heat butter in a skillet or grill pan over medium heat.
  11. Place the wraps seam-side down and cook for 2–3 minutes per side until golden and crispy.
  12. Remove from heat, slice in half, and serve warm.

Notes

  • Freeze the steak for 20 minutes before slicing to make thin cuts easier.
  • Use large tortillas to prevent the filling from spilling out.
  • Do not overfill the wraps for easier grilling.
  • Press the wraps gently while grilling to create a crispy exterior.
  • Serve immediately for the best texture and flavor.
