Oven Roasted Garlic Cabbage Steaks are crispy on the edges, tender in the center, and packed with bold garlic flavor. This easy roasted cabbage recipe makes a healthy, low-carb side dish ready in 40 minutes.

  • 1 large green cabbage
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Remove loose outer leaves from cabbage and slice into 3/4 to 1-inch thick steaks, keeping the core intact.
  3. Arrange cabbage steaks in a single layer on the baking sheet.
  4. Mix olive oil and minced garlic, then brush evenly over both sides of each cabbage steak.
  5. Sprinkle with salt, black pepper, and optional seasonings.
  6. Roast for 25–30 minutes, flipping halfway through, until edges are golden and crispy.
  7. Optional: Broil for 2–3 minutes at the end for extra crispiness.
  8. Serve warm and garnish with Parmesan if desired.

  • Cut cabbage evenly to prevent steaks from falling apart.
  • Do not overcrowd the baking sheet to ensure crispy edges.
  • Reheat in the oven rather than microwave to maintain texture.
