One-Pot Cajun Jambalaya is a bold Southern rice dish made with chicken, shrimp, and sausage simmered with vegetables and Cajun spices for deep, smoky flavor in a single pot.

  • 1 tablespoon olive oil
  • 8 oz chicken sausage sliced
  • 12 oz boneless chicken thighs, diced
  • 8 oz raw shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large heavy pot over medium heat.
  2. Add sausage and cook until browned, then remove and set aside.
  3. Add chicken and cook until lightly browned.
  4. Add onion, bell pepper, and celery; sauté until softened.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add Cajun seasoning, paprika, thyme, cayenne, bay leaf, salt, and pepper.
  7. Return sausage to the pot and stir in rice until coated.
  8. Pour in chicken broth and bring to a gentle boil.
  9. Reduce heat, cover, and simmer for 20–25 minutes until rice is tender.
  10. Add shrimp during the last 5 minutes of cooking.
  11. Remove bay leaf, let rest for 5 minutes, then fluff and serve.

Notes

  • Use long-grain rice for best texture.
  • Add shrimp at the end to prevent overcooking.
  • Adjust Cajun seasoning to control heat.
  • Let the dish rest before serving to improve texture.
