No Bake Strawberry Delight is a layered dessert featuring a buttery graham cracker crust, fresh strawberries, creamy no-bake cheesecake, and fluffy homemade whipped cream. It’s an easy, refreshing summer dessert perfect for parties and gatherings.

  • 2 cups (240g) graham cracker crumbs
  • ½ cup (113g) unsalted butter, melted
  • 16 ounces (452g) full-fat cream cheese, room temperature
  • ¼ cup (48g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup (236ml) heavy whipping cream
  • ½ cup (65g) powdered sugar
  • 2 tablespoons instant strawberry Jell-o mix
  • 2 lbs (32oz) fresh strawberries, washed and dried
  • 1 cup (236ml) heavy whipping cream for topping
  • ½ cup (65g) powdered sugar for topping

Instructions

  1. Prep the strawberries: wash, dry, remove stems, dice 1 cup for filling, slice remaining for crust layer.
  2. Make the graham cracker crust: combine crumbs and melted butter, press into a 9×9 pan, refrigerate.
  3. Prepare whipped cream: chill bowl, beat heavy cream until soft peaks, add powdered sugar, beat until stiff peaks, set aside.
  4. Make cheesecake filling: beat cream cheese, sugar, lemon juice, vanilla until smooth, fold in whipped cream.
  5. Divide filling: half plain, half with strawberry Jell-o and diced strawberries.
  6. Assemble dessert: layer sliced strawberries on crust, spread plain cheesecake filling, then strawberry cheesecake filling, top with whipped cream.
  7. Chill 4-6 hours or overnight before serving.

Notes

  • Dry strawberries thoroughly to prevent watery dessert.
  • Optional: use strawberry-flavored whipped cream for extra flavor.
  • Cool Whip can replace homemade whipped cream to save time.
  • Freeze-dried strawberries can substitute for strawberry Jell-o if unavailable.
