  • 1/2 cup lemon juice (fresh preferred)
  • 1 (8-oz) tub cool whip, thawed
  • 1 (9-inch) graham cracker crust (store-bought or homemade)

Instructions

  1. In a large bowl, whisk together the sweetened condensed milk and lemon juice until thickened.
  2. Gently fold in the cool whip using a spatula until fully combined.
  3. Pour the filling into the graham cracker crust and smooth the top.
  4. Refrigerate for at least 4 hours or overnight until the pie is fully set.
  5. Top with whipped cream or lemon zest before serving, if desired.

Notes

  • Add a few drops of yellow food coloring for a brighter color.
  • For extra flavor, mix in 1 teaspoon of lemon zest.
