These No Bake Coconut Snowballs are an easy, creamy, bite-sized dessert made with shredded coconut, condensed milk, and vanilla. Perfect for holidays, parties, or a quick no-bake treat that requires no oven and minimal prep time.

  • 3 cups shredded coconut (unsweetened, fine or medium)
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: almonds or white chocolate chips for filling
  • Extra shredded coconut for coating

Instructions

  1. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt.
  2. Stir until the mixture becomes thick and sticky, holding together when pressed.
  3. Using your hands or a small scoop, form 1-inch balls. Insert an almond or chocolate chip inside if desired.
  4. Roll each ball in extra shredded coconut until fully coated.
  5. Place the snowballs on a parchment-lined tray.
  6. Refrigerate for at least 1 hour to firm up before serving.
  7. Store in an airtight container in the refrigerator for up to 7 days.

Notes

  • If the mixture is too dry, add more condensed milk, one teaspoon at a time.
  • Use unsweetened coconut to avoid excess sweetness.
  • Chilling helps the snowballs hold their shape and enhances flavor.
  • For vegan version, replace condensed milk with coconut condensed milk or coconut cream mixed with maple syrup.
  • Can be frozen for up to 2 months; thaw before serving.
