  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (use sugar-free for keto)
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 4 pieces of bacon, cooked and crumbled
  • 1/2 cup diced tomatoes
  • 2 tablespoons sliced green onions
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400℉.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Pound chicken breasts to even thickness, season with salt and pepper.
  4. Sear chicken in skillet for 4–5 minutes per side until no longer pink.
  5. Turn off heat and spoon BBQ sauce over each chicken breast.
  6. Sprinkle cheese and crumbled bacon evenly over the chicken.
  7. Transfer skillet to the oven and bake for 2–3 minutes until cheese is melted.
  8. Garnish with diced tomatoes and green onions.
  9. Serve immediately and enjoy.
