Mini Pepper Pizzas are a quick, healthy, and colorful twist on traditional pizza. Using mini sweet peppers instead of crust, these bite-sized snacks are gluten-free, low-carb, and perfect for parties, lunches, or healthy appetizers.

Ingredients

  • 1012 mini sweet peppers – halved and seeds removed
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and slice the mini peppers in half lengthwise, removing seeds and membranes.
  3. Lightly brush each pepper half with olive oil and place them cut side up on the baking sheet.
  4. Spoon about one teaspoon of pizza sauce into each pepper half.
  5. Top with shredded mozzarella cheese and your preferred toppings.
  6. Bake for 10–12 minutes, until cheese is melted and bubbly.
  7. Remove from oven and let cool slightly before serving.
  8. Garnish with chopped parsley or Italian seasoning if desired.

Notes

  • You can prepare mini pepper pizzas ahead and refrigerate for up to 24 hours before baking.
  • Use dairy-free cheese for a vegan version.
  • Store leftovers in an airtight container for up to 3 days.
  • Freeze baked mini pepper pizzas and reheat in the oven or air fryer for best results.
