Maple roasted carrots with cranberries is a vibrant and flavorful side dish combining sweet maple glaze, tangy cranberries, creamy feta, and crunchy walnuts. Perfect for holidays or weeknight dinners, it’s ready in just 30 minutes.

  • 2 lbs large carrots, cut into ¼-inch diagonals
  • 2 Tbsp unsalted butter, melted
  • 1 Tbsp avocado oil
  • 2 Tbsp pure maple syrup
  • ½ tsp sea salt, to taste
  • ½ cup feta cheese crumbles
  • ¼ cup dried cranberries
  • ¼ cup toasted walnuts
  • 2 Tbsp fresh parsley, finely chopped

Instructions

  1. Preheat oven to 420°F (215°C) and lightly grease a large baking sheet.
  2. Wash and scrub carrots thoroughly, then cut into ¼-inch diagonal slices.
  3. In a large bowl, combine melted butter, avocado oil, maple syrup, and sea salt. Toss carrots in the mixture until well coated.
  4. Spread carrots in a single layer on the baking sheet and roast for 18–22 minutes, flipping halfway through, until golden and tender.
  5. Remove from oven and let cool slightly.
  6. Add feta, dried cranberries, toasted walnuts, and fresh parsley. Toss gently to combine.
  7. Serve warm as a side dish and enjoy.

Notes

  • For dairy-free, omit feta or use a vegan alternative.
  • Fresh cranberries can be used for a more tart flavor but may require extra sweetener.
  • Whole carrots can be roasted but will need 25–30 minutes.
  • Can be made ahead and reheated before serving.
  • Experiment with herbs like rosemary or thyme for added flavor.
