  • 2 1/2 cups chicken broth
  • 1 cup canned diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken sausage and cook until lightly browned.
  3. Add onion, bell pepper, and celery; cook until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add rice, paprika, thyme, cayenne, bay leaf, salt, and pepper; stir to coat the rice.
  6. Pour in chicken broth and diced tomatoes, stirring well.
  7. Bring to a boil, then reduce heat, cover, and simmer for 20–25 minutes until rice is tender.
  8. Remove bay leaf, let rest for 5 minutes, then fluff and serve.
