Jiffy Corn Casserole is a rich, creamy, cheesy Southern-style side dish made with just 7 simple ingredients. It’s perfect for holidays, potlucks, or cozy family dinners and is a guaranteed crowd-pleaser.

Ingredients

  • 1/2 cup butter, melted
  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, not drained
  • 1 can (15 oz) creamed corn
  • 1 egg
  • 8 oz cheddar cheese, shredded (about 2 cups)
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter directly in a 9×13 baking dish.
  3. Add Jiffy mix, whole corn, creamed corn, egg, and half of the shredded cheese to the dish. Mix until well combined.
  4. Dollop sour cream across the top and gently swirl it into the mixture with a knife.
  5. Sprinkle remaining cheese evenly on top.
  6. Bake uncovered for 40–45 minutes, or until center is set and lightly golden.
  7. Let rest for 5 minutes before serving warm.

Notes

  • Use only Jiffy brand for the authentic flavor and texture.
  • Don’t drain the whole kernel corn.
  • You can prepare the casserole a day ahead and refrigerate before baking.
  • To freeze, wrap tightly before or after baking and store for up to 3 months.
  • Add bacon, jalapeños, or green chiles for variation.
