Ingredients

Scale
  • 1½ cups all-purpose flour or cake/pastry flour
  • 1½ teaspoons baking powder
  • 1 pinch salt
  • 3 large eggs, separated (room temperature)
  • 1 egg yolk (room temperature)
  • 1½ cups + 2 tablespoons granulated sugar
  • ½ cup vegetable oil (corn, sunflower, or light olive oil)
  • ¼ cup + 2 tablespoons Limoncello (room temperature)
  • Zest of 1 lemon (room temperature)

Instructions

  1. Preheat oven to 350°F (180°C). Grease and flour a 9-inch bundt or 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat the egg whites until stiff peaks form. Set aside.
  4. In a large bowl, beat the egg yolks and sugar until light and creamy (about 3–5 minutes).
  5. Add oil, limoncello, and lemon zest to the yolk mixture. Beat until smooth.
  6. Stir in the dry ingredients until just combined.
  7. Gently fold in the stiff egg whites until fully incorporated.
  8. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Dust with powdered sugar or glaze with a simple lemon-limoncello drizzle if desired.

Notes

  • To make cake flour: For every cup of all-purpose flour, remove 2 tablespoons and replace with 2 tablespoons of cornstarch. Sift together thoroughly.
  • Room temperature ingredients mix better and yield a more tender cake.
  • The cake can be stored at room temperature for 2 days, refrigerated up to 6 days, or frozen for 3 months.
  • A simple glaze can be made by mixing 1 cup powdered sugar with 1–2 teaspoons of limoncello or lemon juice.
