Healthy Eggplant Rollatini is a light and satisfying baked dish made with tender eggplant slices rolled around a creamy, balanced filling and baked in a simple tomato sauce for a wholesome meal.

Ingredients

  • 2 medium eggplants, sliced lengthwise
  • 1 cup reduced-fat ricotta cheese or cottage cheese
  • 1/4 cup grated mozzarella or Parmesan cheese
  • 1 cup tomato sauce
  • 1 cup fresh spinach, finely chopped (optional)
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • Cooking spray or 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Wash eggplants, trim ends, and slice lengthwise into thin strips.
  3. Lightly spray or brush eggplant slices with oil and bake for 10 minutes until just tender.
  4. In a bowl, mix ricotta cheese, garlic, herbs, salt, pepper, and spinach if using.
  5. Spoon a small amount of filling onto each eggplant slice and roll gently.
  6. Spread a thin layer of tomato sauce in a baking dish.
  7. Arrange rolls seam-side down in the dish and spoon remaining sauce over top.
  8. Sprinkle lightly with grated cheese.
  9. Bake uncovered for 20–25 minutes until heated through and bubbly.
  10. Serve warm.

Notes

  • Bake eggplant slices just until flexible to avoid breaking.
  • Do not overfill rolls to keep them intact.
  • Use thicker sauce to prevent excess moisture.
  • Flavors improve after resting for a few minutes.
