This Hamburger Rice Casserole is a creamy, hearty, and comforting one-dish dinner made with ground beef, rice, and a savory mushroom sauce. Perfect for busy weeknights, it’s simple to make, customizable, and family-approved.

  • 1 lb ground beef (85/15 lean-to-fat ratio)
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 ½ cups beef broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional, for topping)
  • 2 tbsp butter or olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt butter or heat olive oil over medium heat.
  3. Add ground beef and cook until browned, breaking apart as it cooks.
  4. Stir in onion and garlic; cook until softened and fragrant.
  5. Drain any excess fat and transfer the mixture to a mixing bowl.
  6. Add cream of mushroom soup, beef broth, soy sauce, and uncooked rice to the bowl.
  7. Mix in vegetables or other add-ins if desired, and season with salt and pepper.
  8. Pour mixture into a greased 9×13-inch casserole dish.
  9. Cover with foil and bake for 60 minutes.
  10. Remove foil, sprinkle with cheese (if using), and bake uncovered for an additional 10–15 minutes.
  11. Let it rest for 10 minutes before serving.

Notes

  • Substitute cream of mushroom soup with cream of chicken or celery for variety.
  • For a healthier option, use ground turkey instead of beef.
  • Use brown rice for added fiber but increase baking time to 90 minutes.
  • Add peas, carrots, or bell peppers for more color and nutrition.
  • Top with breadcrumbs or fried onions for extra crunch.
