  • 4 medium Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh chives, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and dry the potatoes thoroughly.
  2. Place a potato on a cutting board and slice thin cuts across the top, leaving the base intact.
  3. Repeat with all potatoes to create the Hasselback pattern.
  4. In a small bowl, mix melted butter, chopped chives, minced garlic, salt, and pepper.
  5. Brush the butter mixture over the potatoes, making sure it gets between the slices.
  6. Preheat the grill to medium heat (about 375°F / 190°C).
  7. Place the potatoes on foil or a grill-safe tray.
  8. Grill for 35–45 minutes, brushing with additional butter during cooking.
  9. Cook until the potatoes are tender inside and the edges are crispy.
  10. Remove from the grill, add extra chives if desired, and serve warm.
