This Gingerbread Loaf with Frosting is a festive, moist, and warmly spiced holiday treat. Topped with tangy cream cheese frosting and pecans, it’s perfect for Christmas brunch, dessert, or gifting.

Ingredients

  • 120g unsalted butter, at room temperature
  • Zest from 1 orange
  • 170g brown sugar
  • 2 eggs
  • 30g vegetable oil
  • 1/2 tsp vanilla extract or essence
  • 2 tbsp honey
  • 120g milk
  • 2 1/2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 tsp salt
  • 210g all-purpose flour
  • 2 tsp baking powder
  • 100g pecans, toasted and chopped
  • 100g cream cheese
  • 4 1/2 tbsp icing sugar
  • 1 1/2 tbsp whipping cream

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9×4 inch (22×11 cm) loaf pan.
  2. Cream the butter, brown sugar, and orange zest in a bowl until fluffy.
  3. Add the eggs one at a time and mix well.
  4. Stir in vanilla extract, vegetable oil, honey, and milk until combined.
  5. In a separate bowl, mix the flour, baking powder, ground ginger, cinnamon, cloves, and salt.
  6. Gradually combine the dry ingredients with the wet ingredients using a spatula—do not overmix.
  7. Fold in the chopped pecans.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55–60 minutes, checking at 45 minutes. Cover with foil if browning too quickly.
  10. Remove from oven and cool completely in the pan before frosting.
  11. To make the frosting, whisk cream cheese, icing sugar, and whipping cream until smooth.
  12. Spread the frosting over the cooled loaf and garnish with chopped pecans and festive toppings if desired.

  • Frost only after the loaf has fully cooled.
