  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 12 tsp espresso powder (optional)
  • 1/2 cup unsalted butter (softened, for frosting)
  • 1 ½ cups powdered sugar
  • 1 tbsp instant coffee or espresso (for frosting)
  • 12 tbsp heavy cream or milk
  • 1/2 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 baking pan with parchment paper.
  2. In a bowl, whisk together melted butter and sugar until smooth.
  3. Add eggs and vanilla extract, beating until creamy.
  4. Stir in cocoa powder, espresso powder, flour, and salt. Mix until just combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 20–25 minutes, or until a toothpick comes out with moist crumbs.
  7. Let brownies cool completely in the pan.
  8. In a separate bowl, beat softened butter until fluffy.
  9. Add powdered sugar, espresso or coffee, vanilla extract, and mix.
  10. Add cream or milk gradually until frosting reaches desired consistency.
  11. Spread frosting over cooled brownies with an offset spatula.
  12. Chill slightly before slicing for cleaner edges.
