Frito Pie Casserole is a quick and easy Tex-Mex comfort food made with seasoned ground beef, salsa, black beans, corn, melty cheese, and crunchy Fritos chips—perfect for weeknight dinners or parties.

  • 1 pound ground beef
  • 1/4 cup diced yellow onion
  • 3/4 cup water
  • 1 ounce packet taco seasoning (or 3 tablespoons homemade)
  • 16 ounce jar salsa
  • 15 ounce can black beans, drained and rinsed (optional)
  • 10 ounce can Rotel with green chiles, drained
  • 1 cup frozen corn
  • 9.25 ounce bag Fritos corn chips (divided use)
  • 8 ounces shredded Mexican cheese blend (divided use)
  • Optional toppings: diced tomatoes, sliced jalapeños, sour cream, guacamole, sliced olives, green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook ground beef and diced onion over medium heat until no longer pink. Drain excess grease.
  3. Add water and taco seasoning. Simmer for 3 minutes until thickened.
  4. Stir in salsa, black beans, Rotel, and corn. Mix well and remove from heat.
  5. In a 9×13-inch baking dish, spread 3/4 of the bag of Fritos.
  6. Top with 3/4 of the shredded cheese to cover the chips.
  7. Spread the beef mixture evenly over the cheese layer.
  8. Sprinkle the remaining cheese on top of the meat mixture.
  9. Bake uncovered for 20 minutes or until the cheese is melted and bubbly.
  10. Remove from oven and top with the remaining Fritos and any desired garnishes.

Notes

  • Use ground turkey or chicken for a leaner option.
  • Substitute tortilla chips or Doritos if Fritos aren’t available.
  • Add jalapeños or hot salsa for extra heat.
  • Omit beans or onions to accommodate picky eaters.
  • To maintain chip crunch, add top layer of Fritos after baking.
  • Make ahead and refrigerate up to 2 days before baking.
  • Freeze without chips and add them fresh when baking.
