Focaccia Cheesy Garlic Bread is a fluffy, golden bread stuffed with gooey mozzarella, topped with cheddar, and brushed with flavorful garlic butter. It’s the perfect appetizer or side for any pasta night.

Ingredients

  • 1 cup warm water
  • 2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • 1/3 cup olive oil
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 2 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon kosher salt (for butter mix)
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes.
  2. Mix olive oil, Italian seasoning, minced garlic, and salt. Add half of this to the yeast mixture.
  3. Add flour to the bowl and mix until dough forms. Transfer to a greased bowl and cover. Let rise for 1 hour.
  4. Preheat oven to 450°F. Grease a 12-inch cast-iron skillet with remaining oil mixture.
  5. Press half the dough into the skillet and dimple it with your fingers. Top with 1 cup of mozzarella.
  6. Form remaining dough into a 12-inch round and place it over the cheese layer. Dimple the top layer.
  7. Mix melted butter, parmesan, garlic, parsley, and salt. Brush over the top dough layer.
  8. Sprinkle with remaining mozzarella and cheddar cheese.
  9. Bake for 20–25 minutes or until golden brown and cheese is bubbly.
  10. Optional: Slice into strips after 16 minutes, return to oven for 2–3 minutes for easier serving.

Notes

  • You can prep the dough a day ahead and refrigerate overnight.
  • No cast-iron skillet? Use a 9×11 or 9×13 inch baking dish.
  • Customize with herbs, pepperoni, or alternate cheeses.
  • Reheat leftovers in an oven or air fryer for best texture.
