Fiesta Lime Chicken with Avocado is a bold Tex-Mex inspired dish featuring juicy lime-marinated chicken topped with melted cheese, fresh avocado, and vibrant garnishes. It’s a quick, high-protein dinner packed with zesty flavor.

  • 4 boneless skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Mexican cheese blend
  • 1 large ripe avocado, sliced
  • 1/2 cup pico de gallo
  • 2 tablespoons fresh cilantro, chopped
  • Optional: sour cream for serving

Instructions

  1. In a bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper.
  2. Place chicken in a zip-top bag or dish and pour marinade over it. Refrigerate for at least 30 minutes, up to 4 hours.
  3. Preheat grill, skillet, or oven to medium-high (or 400°F if baking).
  4. Cook chicken for 5–7 minutes per side on grill or skillet, or bake for 20–25 minutes, until internal temperature reaches 165°F.
  5. Sprinkle shredded cheese over cooked chicken and allow it to melt (cover briefly or return to oven for 3–5 minutes).
  6. Remove from heat and let rest for 5 minutes.
  7. Top with sliced avocado, pico de gallo, chopped cilantro, and optional sour cream before serving.

Notes

  • Do not marinate longer than 6 hours to avoid texture changes from lime juice.
  • Pound chicken breasts to even thickness for uniform cooking.
  • Use a meat thermometer to prevent overcooking.
  • Add avocado just before serving to prevent browning.
  • Store cooked chicken (without toppings) in the refrigerator for up to 4 days.
