Easy Rhubarb Crisp is a classic homemade dessert featuring tart rhubarb baked under a sweet, buttery oat topping. This simple recipe creates a warm and comforting fruit dessert that is perfect for spring and summer baking.

  • 4 cups fresh rhubarb, chopped
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Place the chopped rhubarb in a large mixing bowl.
  3. Add granulated sugar, cornstarch, and lemon juice, then stir to coat the rhubarb evenly.
  4. Transfer the rhubarb mixture into the prepared baking dish and spread evenly.
  5. In another bowl, combine rolled oats, flour, brown sugar, and cinnamon.
  6. Add the cold cubed butter and mix until the mixture forms coarse crumbs.
  7. Sprinkle the crisp topping evenly over the rhubarb filling.
  8. Bake in the preheated oven for 35–40 minutes until the topping is golden brown and the filling is bubbling.
  9. Remove from the oven and allow the crisp to cool for about 10 minutes.
  10. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • Fresh rhubarb provides the best texture, but frozen rhubarb can also be used if thawed and drained.
  • Use cold butter to achieve a crumbly crisp topping.
