Easy One Pot Taco Pasta made with seasoned ground beef, tender pasta, tomatoes, and melted cheddar cheese. A quick and hearty one-pot dinner perfect for busy weeknights.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked pasta (elbows or small shells)
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, cook ground beef until browned, breaking it into small pieces. Drain excess fat if needed.
  2. Add diced onion and cook until softened, then stir in minced garlic and cook for 30 seconds.
  3. Stir in taco seasoning and cumin. Cook for 1 minute to toast the spices.
  4. Add diced tomatoes, tomato sauce, and beef broth. Stir well and bring to a gentle simmer.
  5. Add uncooked pasta and stir to ensure it is mostly submerged in liquid.
  6. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
  7. Reduce heat and stir in shredded cheddar cheese until melted and creamy.
  8. Let rest for 5 minutes before serving to allow sauce to thicken.
