Easy creamy cucumber salad is a refreshing side dish made with thinly sliced cucumbers, red onion, and a tangy sour cream dill dressing. It is quick to prepare, light, and perfect for warm-weather meals or as a classic comfort side.

Ingredients

Scale
  • 3 cups thinly sliced cucumbers
  • 1 cup thinly sliced red onion
  • 1/2 cup sour cream
  • 1 tablespoon white vinegar
  • 2 tablespoons fresh dill, minced
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash the cucumbers thoroughly. Peel if using regular cucumbers, then slice them very thin.
  2. Thinly slice the red onion. If desired, soak in cold water for 10 minutes to reduce sharpness, then drain well.
  3. Place the sliced cucumbers and onions into a large mixing bowl.
  4. In a separate bowl, whisk together sour cream, white vinegar, dill, sugar, salt, and garlic powder until smooth.
  5. Pour the creamy dressing over the cucumbers and onions.
  6. Gently toss until everything is evenly coated.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Stir gently before serving and adjust seasoning if needed.

Notes

  • For best texture, use English or Persian cucumbers.
  • Salting and draining cucumbers briefly can help reduce excess water.
  • Greek yogurt can be used instead of sour cream for a lighter version.
  • This salad is best served chilled.
