This Easy Cinnamon Sugar Apple Cake is the ultimate fall dessert made with apple butter, boiled cider, and warm spices, topped with a buttery cinnamon sugar crust and served optionally with salted honey butter.

Ingredients

Scale
  • 1½ cups apple cider
  • ½ cup coconut oil (or melted butter)
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ⅓ cup maple syrup
  • ½ cup apple butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon apple/pumpkin pie spice
  • ¼ teaspoon salt
  • 2 Honeycrisp apples, thinly sliced
  • ⅓ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 tablespoons cold salted butter, grated

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. In a small saucepan, bring apple cider to a boil over high heat. Reduce to a simmer and cook for 10–15 minutes until reduced to ½ cup. Let cool.
  3. In a large mixing bowl, whisk together reduced cider, coconut oil, vanilla, eggs, maple syrup, and apple butter until smooth.
  4. Add flour, baking soda, pie spice, and salt. Mix until just combined. Fold in thinly sliced apples.
  5. Spread batter evenly in the prepared baking dish.
  6. In a small bowl, mix granulated sugar, cinnamon, and grated cold butter until crumbly.
  7. Sprinkle the cinnamon sugar mixture evenly over the batter.
  8. Bake for 30–40 minutes or until a toothpick comes out clean or with moist crumbs.
  9. Let cool slightly and serve warm, optionally topped with salted honey butter.

Notes

  • Leave apple skins on for added texture and fiber.
  • Store leftovers in an airtight container at room temp for 3 days or refrigerate up to 5 days.
  • Freeze individual slices for up to 2 months.
  • Optional Salted Honey Butter: Mix 6 tbsp soft salted butter with 6 tbsp honey and a pinch of sea salt.
