Easy cherry clafoutis is a classic French dessert made with juicy cherries baked in a light, custard-like batter. It is simple to prepare, lightly sweet, and perfect for brunch or dessert.

  • 1 1/2 cups fresh cherries, pitted
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter (for greasing the dish)
  • 1 tablespoon sugar (for dusting the dish)

Instructions

  1. Preheat the oven to 350°F (175°C) and generously butter a shallow baking dish.
  2. Dust the buttered dish lightly with sugar to prevent sticking.
  3. Wash, pit, and thoroughly dry the cherries, then spread them evenly in the baking dish.
  4. In a bowl, whisk the eggs and granulated sugar until pale and slightly thickened.
  5. Add the flour and salt, whisking until smooth and lump-free.
  6. Gradually whisk in the milk, then stir in the vanilla extract.
  7. Pour the batter gently over the cherries in the prepared dish.
  8. Bake for 35 to 45 minutes, until the clafoutis is lightly golden and just set in the center.
  9. Remove from the oven and let cool for at least 10 minutes before serving.

Notes

  • Do not overbake, as clafoutis should remain softly custardy.
  • The dessert will deflate slightly as it cools, which is normal.
  • Frozen cherries may be used if fully thawed and drained.
  • Serve warm or at room temperature for best texture.
