Easy California Roll Cucumber Salad is a fresh, sushi-inspired salad made with crisp cucumbers, creamy avocado, crab-style seafood, and a lightly sweet and savory dressing. It delivers classic California roll flavors in an easy, no-roll salad form.

Ingredients

  • 3 Persian or mini cucumbers, thinly sliced
  • 1 cup imitation crab meat, shredded
  • 1 ripe avocado, diced
  • 1/3 cup Kewpie mayonnaise (or regular mayo)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Wash the cucumbers and slice them thinly into rounds or half-moons.
  2. Lightly salt the cucumbers and let them rest for 10 minutes, then pat dry.
  3. In a bowl, whisk together mayonnaise, rice vinegar, sugar, and sesame oil until smooth.
  4. Add the cucumbers, shredded crab, and diced avocado to a large bowl.
  5. Pour the dressing over the ingredients and gently toss to coat evenly.
  6. Sprinkle with sesame seeds and green onions if using.
  7. Chill for 15–20 minutes before serving for best flavor.
