Easy Cajun Jambalaya Soup is a bold and cozy Southern soup made with chicken, chicken sausage, rice, vegetables, and Cajun spices simmered in a rich, flavorful broth.

  • 1 tablespoon olive oil
  • 10 oz chicken sausage, sliced
  • 12 oz boneless chicken breast or thighs, diced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup canned diced tomatoes
  • 1/2 cup long-grain white rice
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken sausage and cook until lightly browned, then remove and set aside.
  3. Add chicken and cook until lightly browned.
  4. Add onion, bell pepper, and celery; sauté until softened.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add Cajun seasoning, paprika, thyme, cayenne, bay leaf, salt, and pepper.
  7. Return chicken sausage to the pot.
  8. Pour in chicken broth and diced tomatoes, then stir in rice.
  9. Bring to a boil, reduce heat, and simmer uncovered for 20–25 minutes until rice is tender.
  10. Remove bay leaf, adjust seasoning, and serve hot.

Notes

  • Use long-grain rice to prevent the soup from becoming too thick.
  • Add extra broth if the soup thickens while sitting.
  • Adjust Cajun seasoning to control spice level.
  • This soup tastes even better the next day.
