Easy Apricot Chicken is a sweet and savory baked chicken recipe coated in a flavorful apricot glaze. This simple dinner combines tender chicken with apricot preserves, garlic, and lemon for a delicious meal perfect for busy weeknights.

  • 2 pounds chicken thighs or chicken breasts
  • 3/4 cup apricot preserves
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon chopped parsley (optional garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Pat the chicken dry with paper towels and place the pieces in the prepared baking dish.
  3. In a mixing bowl combine apricot preserves, soy sauce, lemon juice, minced garlic, olive oil, black pepper, and paprika.
  4. Whisk the ingredients until the sauce becomes smooth.
  5. Pour the apricot sauce evenly over the chicken pieces and turn them to coat well.
  6. Bake for 35–45 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. During baking spoon some of the sauce over the chicken to create a glaze.
  8. Remove from the oven and allow the chicken to rest for a few minutes.
  9. Garnish with chopped parsley and serve with the pan sauce.

  • Chicken thighs tend to stay juicier during baking.
  • If the sauce tastes too sweet add a little extra lemon juice.
  • Fresh apricots can be cooked into a sauce as an alternative to preserves.
  • This recipe pairs well with rice, roasted vegetables, or salad.
