This Delicious & Easy Miso Glazed Eggplant Recipe features tender eggplant coated in a rich umami-packed miso glaze, creating a simple yet flavorful plant-based dish perfect for quick and healthy meals.

Ingredients

Scale
  • 2 medium eggplants, sliced lengthwise
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce or gluten-free tamari
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar or lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil (optional)
  • 12 tablespoons water, as needed

Instructions

  1. Wash the eggplants, trim the ends, and slice them lengthwise into even pieces.
  2. In a small bowl, whisk together miso paste, soy sauce, maple syrup, vinegar, olive oil, sesame oil, and water until smooth.
  3. Heat a skillet over medium heat or preheat the oven to 400°F.
  4. Brush the eggplant slices generously with the miso glaze.
  5. Cook the eggplant in the skillet or roast in the oven until tender and lightly caramelized.
  6. Flip the eggplant halfway through cooking and brush with additional glaze.
  7. Remove from heat once the eggplant is soft and glossy.
  8. Serve warm and enjoy.

Notes

  • White miso works best for a mild, balanced flavor.
  • Cook over moderate heat to prevent the glaze from burning.
  • Asian eggplants cook faster and have a creamier texture.
  • Best enjoyed fresh, but leftovers reheat well.
