Cucumber shrimp salad is a light and refreshing dish made with tender shrimp, crisp cucumbers, fresh herbs, and a bright citrus dressing. It is healthy, protein-rich, and perfect for warm-weather meals or quick lunches.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh dill or parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Greek yogurt or light mayonnaise (optional)

Instructions

  1. Bring a pot of lightly salted water to a boil and cook the shrimp for 2–3 minutes until pink and opaque.
  2. Drain the shrimp and transfer them to an ice bath to cool, then pat dry.
  3. Slice the cucumbers and red onion thinly.
  4. In a large bowl, combine shrimp, cucumber, red onion, and fresh herbs.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and yogurt or mayonnaise if using.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Cover and refrigerate for 15 minutes before serving.

Notes

  • Do not overcook shrimp to keep them tender.
  • English or Persian cucumbers work best.
  • Drain cucumbers if very watery.
  • Best enjoyed within 24 hours.
