This cucumber cream cheese spread is a refreshing and creamy appetizer made with fresh herbs, cucumbers, and cream cheese. It’s perfect for sandwiches, crackers, or as a dip for everything bagel chips.

Ingredients

  • 1 (8 oz) package cream cheese, room temperature
  • 2 small cucumbers, grated (about 1 cup)
  • 2 stalks scallions, thinly sliced
  • 2 tbsp fresh cilantro, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 2 tbsp grainy mustard
  • 1/2 lemon, juiced
  • 1 pinch flaky or kosher salt

Instructions

  1. In a large bowl, add cream cheese, grated cucumber, scallions, cilantro, mint, mustard, lemon juice, and salt.
  2. Use an electric mixer or food processor to whip the mixture until smooth and creamy.
  3. Let the mixture rest for at least 20 minutes to allow the flavors to blend.
  4. Serve with everything bagel chips, bread, or vegetables, or refrigerate until ready to use.

Notes

  • Use English or Persian cucumbers for best texture.
  • No need to strain cucumbers—the moisture helps blend the spread.
  • Fresh dill, red onion, or basil can be added for variation.
  • Can be made a day ahead and stored in the fridge.
