Crunchy Candied Almonds are a sweet, cinnamon-sugar coated snack that’s baked to perfection. Easy to make at home with a handful of ingredients, they’re ideal for holiday gifting, topping salads, or just enjoying by the handful.

  • 1 pound whole raw almonds (about 4 cups)
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon salt
  • 1 large egg white
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper or silicone baking mat.
  2. In a mixing bowl, whisk the egg white and vanilla extract until frothy.
  3. Add the raw almonds to the egg white mixture and toss to coat evenly.
  4. In a separate bowl, mix together brown sugar, granulated sugar, cinnamon, and salt.
  5. Pour the sugar mixture over the coated almonds and stir until all almonds are evenly covered.
  6. Spread the almonds in a single layer on the prepared baking sheet.
  7. Bake for 1 hour, stirring every 15 minutes to ensure even roasting.
  8. Remove from oven and let cool completely before storing.

Notes

  • Use raw almonds with skin for best results.
  • Store in an airtight container at room temperature for up to 2 weeks.
  • To refresh softness, reheat in a 250°F oven for 5–10 minutes.
  • Customize with chai spice, cocoa powder, or citrus zest.
  • Recipe can be doubled or tripled for gifting.
